As a Telugite, I take great pride in how our cuisine is loved across India. Telugu cuisine, or Andhra cuisine in particular, is known to be the spiciest of all in India. On the other hand, the Telugu and Kannada cultures, which are closely related, celebrate New Year’s Day with a chutney that has all six primary flavors. This is meant to signify that life is full of mixed experiences and nothing lasts forever.

So, let’s learn a bit about flavors in Telugu. We’ll discover their names and how Telugu people perceive them. Let’s dive deep and learn about the flavors of Andhra and Telangana.

Understanding The Flavors In Telugu Cuisine

Flavors, also known as Ruchulu in Telugu, are categorized into six types in the Telugu language. They are: sweet, sour, spicy, salty, bitter, and tart.

Coming to the geographical flavors, those who live in the Coastal Andhra region are known for their love of spicy and tangy foods. By spice, I mean the kind you get from masalas. And the Rayalaseema region is known for its heat. Masalas in moderation but pure red chili heat and bold regional flavors. As for the Telangana region, due to the influence of Nijam and Mughal cuisines, they are known for using nutty and earthy foods that balance spice and heat.

Now that you have a rough idea of how flavors in Telugu regions work, let’s learn all about them.

Sweet – Teepi (తీపి)

Everyone’s favorite flavor. Telugu people love sweets just as much as spice, so much that Andhra stands in the top four when it comes to India’s high diabetes population.

“Sweet” is also called Tiyyani or Madhuram (Old Telugu/Literary word). Let’s see some examples.

  • I want something sweet – Naku Emaina Tiyyaga Kavali
  • Sweet Lime Soda – Tiyyani Nimma Soda (తియ్యని నిమ్మ సోడా)
  • This is very sweet – Idi Chalaa Tiyyaga/Madhuramga Undi

Sour – Pulupu (పులుపు)

Tamarind, raw mangoes, and lemon are why the sour flavor is so famous in Telugu culture. At an overall level, no other state in India has so many varieties of dishes that are sour. People make it a point to consume sour foods seasonally depending on the various crops.

Here’s how you use sour – Pulupu in a sentence.

  • This is very sour – Idi Chalaa Pullaga Undi
  • This is a sour curry – Idi Pullani Kura

Spicy – Karam (కారం)

Now we’ve come to the main one. Spicy food is synonymous with Andhra and Telangana cuisine. You often hear much about spicy Indian food, which is somewhat true, but Telugu cuisine takes it a notch higher.

Here’s how you can use this word in a sentence:

  • This is not spicy enough – Deenilo Karam Saripoledhu
  • This soup is very spicy – Ee Soup Chala Karamga Undi
  • You need to put chillis for spice – Karaniki Chillis Vadali

Salty – Uppu (ఉప్పు)

The word for “salt” in Telugu is Uppu, and it’s the same for “salty.” If something is salty, you’d say Idi Uppaga Undi

Like all the other flavors, you’ll find salt in ample amounts in Telugu cuisine. There’s even a popular saying in Telugu that says, “Salt and spice are essential for a rage-full person.”

Here’s how you use the word in a sentence.

  • This lacks some salt – Indulo Konchem Uppu Taggindi
  • I Like Salty Food – Naku Uppaga Undevi Ante Ishtam

Bitter – Chedu (చేదు)

You would guess this is our least favorite flavor, and you are somewhat correct. But Telugu cuisine is very much respected for this. You’d find moms regularly trying to make their children eat bitter gourd because a bit of bitterness is necessary for the stomach from time to time. I don’t know how much of that is true, but that never helped me avoid a bit of bitter gourd curry.

Here’s how you use this in a phrase.

  • This curry is very bitter – Ee Kura Chala Chedhuga Undi
  • I Love Bitterness – Naku Chedu Ante Chalaa Ishtam

Tart – Vagaru (వగరు)

We’ve now reached the final flavor, tart or astringent flavor. For me, this one’s always a bit of a struggle. If you don’t like it, the food doesn’t want to go down the throat, right?

So, here’s how you use this in a sentence.

  • This is a very tarty dish – Ee Vanta Chalaa Vagaruga Undi
  • I’m not a fan of astringent flavor – Naku Vagaru Ante Nacchadu
