1. “Arikanchan” - अरिकांचन (Arikān̄cana)

Arikanchan is a traditional Nepalese cuisine from the Mathil and Tharu cultures. Taro leaves black lentil paste, ginger, garlic, and some other spices are present in the dish.  

Lentils wrapped in taro leaves and spices are steamed and cut into slices before being deep-fried in oil. When taro leaves are in season, you can have them in the meal as a unique tendering staple.

Moreover, you can also use the leaves in curries. Many other vegetable dishes are present in Nepal, but among all, Arikancha is Nepali's favorite. 

2. “Masyaura” - मस्यौरा (Masyaurā)

Masyaura is a typical Nepalese cuisine that consists of sun-dried vegetable balls. The most common ingredient in the dish is black lentils. Black lentils are blended with taro stems, black beans, colocasia leaves, yam, cauliflower, spinach, or potatoes.

You can shape the balls after drying them in the sun for three days before keeping them in airtight containers. Then, you can use masyaura after removing it from the jar and cooking it in oil.

You can also add leaves to soupy curries as desired. Interestingly, the word maas, which means black lentils, is thought to have inspired the dish's name.

3. "Kwati" - क्वाती (Kvātī)

Kwati is a typical Nepalese stew made with several beans. Other ingredients include white peas, chickpeas, soya beans, mung beans, kidney beans, and black-eyed peas.

Turmeric, ginger, salt, and ajwain lovage seeds are also present in the dish.

4. "Gundruk" - गुन्द्रुक (Gundruk)

5. “Dal Bhat” - दाल भाट (Dāla Bhāṭa)

6. "Pulao" - पुलाओ (Pulao)
